Green chickpeas are fresh or freshly dried green immature seeds with vegetal sweetness—seasonal specialty rather than hard dry kabuli. They can be eaten lightly cooked like a vegetable pulse. Colour fades with full maturity and drying to beige. Briefly boil or sauté; toss with chili and lemon. A farmers-market treat in producing regions. Do not treat as long-store dry chickpea.
