Marigoule
A tier
Marigoule is a French chestnut hybrid cultivar grown for vigorous trees and good-sized nuts suited to fresh sales and processing. It is part of the modern orchard toolkit that rebuilt chestnut production with more predictable crops than seedling forests alone. Cooked flavour is classic sweet chestnut. A good Marigoule delivery is uniform and fresh; a bad one is late-season leftovers with soft spots. Roast or peel for puree the same way as other sweet chestnuts. Chefs ordering by cultivar can get more consistent kernel size for plated desserts when the packer actually sorts true to type.
