Smoked Gouda

Smoked Gouda is cow’s-milk Gouda finished with wood smoke or smoked flavouring, usually from a young to mid-aged base so the paste stays sliceable. Cold or warm smoking adds mahogany colour and smoky-sweet aroma over the mild washed-curd sweetness of the cheese. It is sliced for sandwiches, boards, and melting where smoke is wanted without the hardness of long-aged Gouda. Quality ranges from light natural smoke to heavily flavoured industrial blocks.
