Gouda

Gouda is a Dutch cow’s-milk cheese made with washed curd and pressed into large wheels, producing a semi-hard paste that moves from supple and mild when young to firm, crystalline, and caramel-savoury when long aged. Washing the curd lowers lactose and yields a sweeter, cleaner flavour profile than many other rennet cheeses of similar moisture. It is a table, melting, and shaving cheese depending on age. Traditional farmhouse wheels and industrial blocks share the name; age marks (jong, belegen, oud) and crystal development define how it is used in the kitchen.
