Bactrian camels (Camelus bactrianus) are the two-humped camels of Central Asia—Mongolia, China, and historic Silk Road ranges—kept for wool, milk, transport, and meat in extreme continental climates. Domestic Bactrians differ from critically rare wild Bactrians. Meat is robust and lean with a fuller flavour than young dromedary, suiting Mongolian and Chinese stews, hot pots, and winter feasts. Fat from the humps is prized. Availability outside Central Asia is limited to specialty importers and diaspora markets.
