Sarda sarda is Atlantic bonito—a small tuna relative with dark, rich, striped flesh that grills beautifully and cures into strong preserved products. Flavour is meatier and more assertive than albacore; texture is firm. Sear rare to medium-rare, or salt and dry in Mediterranean styles. Remove bloodline for milder plates. Excellent and often underrated when run fish are iced properly. Not the same as Japanese skipjack used for katsuobushi, though related in kitchen role as a savoury dark fish.
