Wagyu is a collective name for Japanese cattle breeds selected for extreme intramuscular fat, fine muscle fibre, and a soft, melt-in-the-mouth texture. Japanese Black accounts for most purebred and crossbred commercial stock; the meat is defined by dense, even marbling that scores highly under JMGA yield and quality grades rather than by sheer carcass size. Culinary use centres on thin slices for sukiyaki and shabu-shabu, seared steaks cooked rare to medium-rare, and small portions where richness is the point. Outside Japan, “Wagyu” may mean fullblood Japanese genetics, F1 crosses, or cattle raised under foreign programs; finish on grain, careful dry or wet ageing, and transparent grading separate premium plates from commodity branding.
