Tip

Tongue tip is the pointed end—smaller, slightly firmer grain, still mild and excellent for neat slices and appetiser portions after simmering and peeling. It cooks with the whole tongue; separation is for portioning after the fact. Slice thin for canapés and sandwiches. Flavour matches the centre. Useful when a whole tongue yields more centre than a single service needs.
