Centre tongue is the middle portion after root and tip are separated—uniform, tender slices once the whole tongue has been simmered and peeled. Mild beef flavour and fine texture make it ideal for cold platters, sandwiches, and warm sautéed slices. Simmer the whole tongue first, peel, then portion the centre for neat carving. Chill for clean slices. Season with mustard, salsa verde, or pickles.
