Sussex is a deep-red native English beef breed from the Weald and coastal counties of south-east England, historically used as powerful draught oxen as well as meat animals. Cattle are hardy, efficient on grass, and produce well-fleshed carcasses with useful marbling and a rich traditional flavour when finished for beef. Culinary positioning is heritage roast-and-grill beef from extensive systems, with joints and steaks that age well and mince suited to classic British dishes. As a rarer native breed, Sussex beef is often sold through specialist butchers and farm shops under UK EUROP classification rather than mass commodity branding.
