Simmental is a large dual-purpose breed originating in the Simme Valley of the Bernese Oberland in Switzerland, known for rapid growth, good milk yield in maternal lines, and substantial lean muscle in beef-focused strains. Coat colour is typically red-and-white or yellow-and-white with a pale face; modern beef types emphasise frame and carcass weight. Culinary performance sits between heavily marbled British breeds and ultra-lean double-muscled types: solid steaks and large joints with moderate marbling when grain- or grass-finished carefully. Fleckvieh and other regional Simmental-derived populations supply much of Central European fresh beef under EUROP grids, while North American Simmental sires add growth in commercial crossbreeding.
