Rubia Gallega

Rubia Gallega is the indigenous blond cattle breed of Galicia in north-west Spain, the source of much of the region’s celebrated beef and the Spanish name for stock known internationally as Galician Blond. Animals are typically raised extensively on Atlantic grassland; older cows and oxen produce highly flavoured, well-textured beef that ages superbly for thick steaks and roasting ribs. Spanish butchers distinguish ternera (younger beef), añojo, and vaca or buey from Rubia Gallega herds, with restaurant culture elevating long-aged chuletones. The breed’s pale coat, strong bone, and maternal ability define its dual agricultural and culinary role in Galicia.
