Eye of Round
Eye of round is a cylindrical, very lean muscle from the round—uniform shape ideal for neat roasts and carpaccio-style thin slicing, but unforgiving if overcooked. Flavour is mild beef; texture can be dry without careful heat and moisture management. Roast low, pull early, rest, and slice paper-thin. Or braise whole. Excellent for cold roast beef sandwiches. Avoid thick well-done steaks—the cut has little fat to protect it.
