Normande is a dual-purpose French cattle breed from Normandy, recognised for rich milk used in butter and cheese and for flavourful, well-marbled beef when animals are finished for meat. The meat tends to be fine-grained with a buttery, dairy-influenced sweetness and good intramuscular fat when grass- and grain-finished on Normandy pastures. Butchers and restaurants prize Normande for roasting joints, bavette, and slow-cooked cuts that benefit from its balanced fat cover. The breed’s spotted coat and dairy heritage distinguish it from pure beef Continental types, while meat-line selection has improved conformation for modern carcass markets.
