Maremmana is a grey Podolian cattle breed of the Maremma coastal plains of Tuscany and Lazio, Italy, known for long lyre horns, heat and parasite tolerance, and extensive grazing on harsh Mediterranean pasture. Beef is lean, dark, and intensely flavoured with a firm texture that benefits from slow cooking, traditional stews, and careful ageing of better cuts. Historically used for draught in malarial wetlands and later for pure beef, Maremmana remains a heritage breed of central Italy. Specialty butchers and Slow Food-style programmes market its grass-fed character as a contrast to more marbled industrial beef.
