Illawarra (Illawarra Shorthorn) is an Australian dual-purpose cattle breed developed in the Illawarra district of New South Wales from Dairy Shorthorn, Ayrshire, and related milking types. Though primarily a dairy breed, Illawarra cattle supply beef from cull cows and steers with moderate conformation, fine-grained meat, and a mild flavour typical of dairy-origin carcasses when finished carefully. Red or roan animals with dairy frame are characteristic. The breed remains a regional Australian specialty, valued historically for milk solids and hardiness in coastal temperate climates, with secondary beef output for domestic manufacturing and retail markets.
