Cattle are medium framed with lyre horns and a silver-grey coat; beef is lean to moderately marbled, fine textured, and flavourful when finished on grass and local forage, suiting traditional south-western French roasts and braises. Once a multipurpose draught and meat animal, modern Gascon selection emphasises maternal ability, ease of calving, and quality beef under Label Rouge and regional schemes. The breed remains important in Occitanie and adjoining mountain departments.
