Friesian cattle are the European black-and-white dairy type closely related to Holstein, historically selected in the Netherlands and neighbouring regions for milk with somewhat more dual-purpose balance than extreme North American Holstein lines. Beef from Friesian and British Friesian stock is typically lean with a clean dairy-beef flavour, improved when animals are finished on good forage or short grain regimes. In the UK and Ireland, British Friesian genetics remain important in dairy herds and dairy-beef systems, often crossed to continental or Angus sires for better conformation. Culinary use mirrors other dairy beef: mince, stewing beef, and carefully aged steaks from well-finished steers.
