Canchim is a Brazilian composite beef breed of approximately five-eighths Charolais and three-eighths zebu (primarily Indubrasil and other Bos indicus), developed to combine European carcass muscle with tropical adaptation. Cattle are typically cream to light tan, muscular, and medium to large framed, yielding lean-to-moderately marbled beef with good conformation under Brazilian grass and feedlot systems. The breed is important in central and southern Brazil as a terminal and rotational sire type and as purebred commercial cattle. Canchim genetics improve growth and yield in zebu-based herds while retaining heat and parasite tolerance for extensive tropical production.
