California bay is not Laurus but Umbellularia californica—a west-coast tree with longer leaves and a much stronger, eucalyptus-camphor punch. One leaf can equal several Mediterranean bays; overuse turns soups medicinal. Use sparingly in bean pots and game stews if you enjoy the bold profile, or avoid when a recipe assumes mild laurel. Never swap 1:1 with Turkish bay. Fresh leaves are especially potent.
