Fuji is a Japanese cross of Red Delicious and Ralls Janet—dense, very sweet, juice-heavy flesh with lasting crunch when well grown and stored. Bi-colour red over yellow skin varies by strain and sun exposure. Sugar levels rank among the highest of common dessert apples, so tartness takes a back seat for most eaters. Peak for fresh eating and lunchboxes; holds in salads better than mealy types. Slow to brown somewhat versus McIntosh. Excellent chilled from the fridge. Baking works but sweetness dominates pies unless balanced with acid fruit like Granny Smith.
