Red annatto describes seed and paste grades selected for deep crimson-orange pigment rather than pale or yellowish lots. Higher bixin content yields richer colour in oil and rice with less seed by weight. Flavour stays mild; the grade is about dye strength and visual drama. Choose red grades for cochinita that should stain vividly and for cheese-style colouring projects. Pale lots need more seed and can taste woodier before colour catches up. Photograph-friendly food styling almost always wants red annatto.
