Non-fat (skim) yoghurt is made from skimmed milk with milkfat near zero. Acidity reads higher, mouthfeel is lean, and manufacturers often rely on milk solids, starches, or gelatine for body. Strained non-fat Greek-style can still be thick and high-protein despite the missing fat. Use when a recipe or diet requires skim dairy. Expect more splitting risk in hot sauces and a less rounded flavour plain. Fruit and vanilla non-fat pots are common; plain non-fat works in smoothies and baking with moisture adjustments.
