Thunnus albacares is yellowfin tuna—the tropical and subtropical tuna with firm red-pink flesh, moderate oil, and a clean beefy-sweet flavour that dominates fresh tuna steaks and much ahi service. It is milder than bluefin and more richly coloured than albacore. Global longline and purse-seine fisheries supply huge volumes. Sear rare, grill steaks, or serve as sashimi when raw-safe. Yellowfin quality varies enormously with handling; look for bright translucent flesh without browning. Do not cook past medium if you want moisture and colour.
