Atlantic yellowfin is Thunnus albacares from Atlantic tropical and subtropical waters—same firm, flavourful red-pink flesh, often sold into European and US East Coast markets as fresh or frozen steaks. Gulf of Guinea and western Atlantic fisheries are major sources. Quality tracks onboard handling in warm seas. Grill medium-rare, pan-sear, or use in cooked Mediterranean tuna dishes. Atlantic yellowfin is excellent with tomato, olive, and caper treatments when cooked through gently. Prefer transparent fishery sources given mixed management outcomes across the Atlantic.
