Nagaimo
A tier
Nagaimo is the long, straight Japanese mountain yam with pale skin and highly mucilaginous white flesh—famous grated raw as tororo over rice and soba. Flavour is clean and faintly sweet; slipperiness is the signature. Different from sticky satoimo taro. Peel and grate just before serving; also slice for light cooking. Keep cold and handle with care—slippery on boards. A washoku texture ingredient more than a heavy starch staple.
