Chinese yam (D. polystachya, nagaimo/huai shan related forms) includes elongated light-skinned tubers used in Chinese medicine-food and Japanese cooking—some types mucilaginous and eaten grated raw (with care), others dried as slices. Flavour is mild and slightly sweet. Distinct from heavy West African pound yams. Grate raw for okonomiyaki batter in Japanese styles; simmer in Chinese soups. Know your cultivar’s raw edibility norms. Slimy texture is valued, not a flaw.
