Verdicchio
Verdicchio is the great white of Italy’s Marche, especially Castelli di Jesi and Matelica, showing green apple, citrus, bitter almond, fennel, and a firm mineral spine that can age toward honey and toast. Body is medium; acid high; colour can hold a green glint that inspired the name. Quality estates produce age-worthy dry wines far above the old fish-bottle souvenir image. Oak is optional; many top wines rely on lees and bottle time instead. Pair with Adriatic seafood, olive-oil pasta, roast rabbit or chicken, and medium-aged pecorino. Verdicchio deglazes beautifully for almond-butter fish sauces and herb reductions—the bitter almond note is culinary gold. Classico and riserva bottles deserve the table; simple young bottles work in the pan.
