Tokaji Aszú
Tokaji Aszú is Hungary’s noble-rot sweet wine from Furmint, Hárslevelű, and related grapes—botrytised berries (aszú) macerated into a base wine, then aged for layered apricot, orange marmalade, honey, and spice with electric acidity. Puttonyos levels historically marked sweetness intensity; modern labelling emphasises residual sugar and quality categories. Serve with blue cheeses, foie gras, or walnut pastries; in cooking, a spoon of Aszú lifts fruit sauces, glaze duck, or finish foie gras pan juices. Heat gently—high sugar browns quickly—and choose quality Aszú over generic “Tokay” labelled imitations.
