Silvaner
Silvaner (Sylvaner) is a central European white of moderate aromatics, high food utility, and flavours of green apple, fresh herbs, soft earth, and a gentle vegetal-mineral note. Franken in Germany bottles distinctive dry Silvaner in the flat bocksbeutel, often with denser body than Rhine light styles; Alsace and parts of Austria and Switzerland also grow it. Acid is medium to high; perfume stays quieter than Riesling or Gewürztraminer—this is a savoury table white more than a nose-first glass. Classic match is white asparagus season in Germany, plus trout, herb sauces, and mild pork. Deglaze asparagus and fish pans without fighting the vegetable’s bitterness. Franken dry Silvaner can handle richer Franconian sausages and onion tart better than fragile Mosel Riesling.
