Rolle
Rolle is the Provençal name for Vermentino, producing dry Mediterranean whites with citrus, white peach, wild herbs, and a saline finish suited to the Côte d’Azur table. Body is medium; acid lively; oak usually minimal so garrigue and sea-breeze notes stay clear. Côtes de Provence and other southern appellations bottle Rolle alone or in blends with Ugni Blanc and Clairette. Compared with fuller Italian Vermentino from Sardinia, Provençal Rolle often feels leaner and more herbal. Pair with bouillabaisse-style fish soups, pissaladière, grilled vegetables, and goat cheese. Deglaze seafood and chicken-with-herbs pans; Rolle’s maquis character matches Provençal cooking better than buttery international Chardonnay. Serve well chilled for aperitif and light courses.
