Ribolla Gialla
Ribolla Gialla is a Friulian and Slovenian border white that can be light, floral, and citrusy in stainless steel or amber, tannic, and complex when fermented on skins in the orange-wine tradition of Collio and Brda. Classic notes include apple, citrus blossom, green tea, and dried herbs; skin-contact versions add apricot skin, spice, and grip. Acid is good; body ranges from light to medium-full depending on maceration. The grape thrives on the ponca marl of the Italy–Slovenia hills. Fresh Ribolla suits seafood and spring vegetables; orange styles partner pork, aged cheese, and spiced dishes like a light red. Deglaze with conventional dry Ribolla for white fish; use skin-contact bottles thoughtfully so tannin does not roughen delicate sauces. Both expressions reward cool-to-cellar service temperatures that keep aromatics open.
