Passerina
Passerina is a central Italian white of Marche and Abruzzo, high in acid with citrus, green apple, white blossom, and a light herbal finish that suits everyday Adriatic tables. Body is light to medium; aromatics are fresher than Trebbiano yet less opulent than Pecorino at full ripeness. Stainless-steel and concrete fermentations dominate; some sparkling and late-harvest experiments exist but dry still wine is the core. The grape’s revival rode the same wave that returned Pecorino to prominence. Pair with fried seafood, light antipasti, vegetable pasta, and young pecorino cheese. Deglaze clam and white-fish pans; Passerina’s acid keeps sauces bright without tropical perfume. Drink young for peak citrus; it is not built as a decade cellar white.
