Nosiola
Nosiola is a pale Trentino white grape wine—hazelnut, apple, and alpine-herb notes over bright mountain acidity—once more common as a base for Vino Santo than as a dry table bottle. Dry Nosiola stays light and slightly bitter on the finish; late-harvest and passito versions concentrate honeyed nut character while keeping a clean, stony spine. In cooking, dry Nosiola suits trout, mountain cheeses, and light cream sauces where hazelnut aroma echoes browned butter. Reduce gently so its delicate perfume survives; use sweeter Nosiola sparingly in fruit compotes or as a poaching liquid for pears with walnuts.
