Jacquère
Jacquère is Savoie’s workhorse white—very pale, high-acid, and lightly floral with citrus, white peach, and wet-stone notes from alpine slopes. Alcohol stays modest; the wine drinks like mountain spring water with a grape’s soft fruit rather than heavy perfume or oak. Jacquère is ideal for fondue, raclette, lake fish, and light herb sauces where you need acid without tannin or sweetness. Deglaze quickly and finish with butter; long reduction can make it taste thin, so add stock or cream for body when needed.
