Godello
Godello is a Galician and Bierzo white prized for orchard fruit, fennel, citrus, and a chalky-mineral structure that can recall fine Chardonnay without heavy oak. Valdeorras and Monterrei lead production; careful yields give medium body, good acid, and ageing potential rare among once-obscure Iberian whites. Lees stirring and occasional large oak add cream without masking stone-fruit clarity. The grape nearly vanished mid-century before quality growers restored it. Pair with scallops, roast chicken, creamy rice dishes, and mild cow’s cheeses. Godello deglazes beautifully for butter sauces and white fish—more substance than Albariño, less tropical than New World Chardonnay. Premium bottles reward a few years in bottle with honeyed complexity still framed by Atlantic freshness.
