Furmint

Furmint is Hungary’s great white grape of Tokaj: high acid, firm structure, and flavours of green apple, quince, smoke, and honey depending on dryness and botrytis. Dry Furmint has surged as a modern table wine—mineral, sometimes oxidative in a controlled way, with real ageing bones—while classic Aszú sweet wines remain among the world’s most complex dessert whites. Slovakia and small plantings elsewhere share the grape. Body ranges medium to full; oak is used judiciously on premium dry wines. Dry Furmint cuts through pork, duck, and mushroom dishes; its acid and smoke suit smoked fish and aged cheese. Sweet Tokaji partners foie gras and blue cheese more than pan sauces. Deglaze with dry Furmint for apple-glazed pork or cabbage dishes—the quince note bridges sweet-savoury cooking of Central Europe.
