Fiano
Fiano is a southern Italian white, especially of Campania, with honeyed orchard fruit, hazelnut, citrus peel, and a waxy texture that gains complexity with short bottle age. It can be floral when young and more nutty-mineral as it settles; acid is medium to high, body medium, and oak is used sparingly in premium bottles. Compared with lighter Trebbiano styles, Fiano feels denser and more savoury on the mid-palate without losing Mediterranean brightness. Match with roast white fish, chicken with herbs, mild smoked mozzarella dishes, and vegetable grills. In reductions Fiano adds nutty depth to cream and butter sauces without tropical sweetness. The grape rewards attentive cooking: keep heat moderate so honeyed notes stay food-friendly rather than sticky.
