Colombard

Colombard is a high-acid southwestern French white long used for Cognac base wine and light table wine, now also bottled as a fruity, citrus-and-passion-fruit everyday white in Gascony, California, South Africa, and Australia. Body is light; perfume can be surprisingly tropical when ripe; residual sugar is sometimes left for softness. It rarely seeks long oak ageing—freshness is the point. In blends it lifts acid in warmer regions where other whites go flat. Practical for seafood boils, ceviche-adjacent citrus marinades, and casual sipping with spicy snacks. Deglaze shrimp and chicken pans with dry Colombard when a sharper, cheaper white is enough. Premium Gascon bottles can show more mineral length than bulk New World jug wine.
