Auxerrois
Auxerrois is a low-acid, softly aromatic white related to the Pinot family—common in Alsace and Luxembourg—showing ripe apple, honey, and gentle spice with less citrus snap than many cool-climate whites. It often softens blends (including some Edelzwicker and Pinot Blanc labelled wines) and can taste broad when fully ripe. Use Auxerrois when a sauce needs white-wine depth without sharp acid: cream sauces for poultry, onion tarts, and mild seafood. Balance with lemon or stock if the wine alone feels low-acid; avoid long reductions that push honeyed notes toward flab.
