Assyrtiko
Assyrtiko is Greece’s iconic volcanic white, peaking on Santorini where low bush vines in basket form yield high-acid, mineral wines of lemon, wet stone, saline, and a firm, almost saline bitterness on the finish. Body is medium; alcohol can be substantial while acid stays electric—an unusual combination that makes the grape excel with food. Mainland and other island plantings can be slightly softer but keep the citrus-mineral DNA. Oak is rare; stainless steel and lees contact preserve precision. Few whites equal grilled octopus, feta, tomato salads, and lemony fish the way Assyrtiko does. Deglaze seafood pans or splash into avgolemono-adjacent sauces carefully—the acid is sharp. Nykteri and barrel-aged styles need richer meze; young unoaked bottles are the everyday Greek seafood glass.
