Aligoté
Aligoté is Burgundy’s other white—leaner and more acid-driven than most village Chardonnay, with lemon, green apple, chalk, and a faint herbal bitterness. Bouzeron and quality growers show real texture; bulk Aligoté can taste sharp and simple, so bottle choice matters. Classic with kir (crème de cassis) and also excellent for snails in garlic butter, oysters, and mustard pan sauces. Its acid cuts fat cleanly; reduce gently and balance with stock so the wine does not dominate with raw citrus bite.
