White Zinfandel
White Zinfandel is a pink, typically off-dry to medium-sweet California style made from Zinfandel with short skin contact, soft berry and melon fruit, low tannin, and easy commercial drinkability. It popularised blush wine in the late twentieth century; quality dry Zinfandel rosés exist but the name “White Zinfandel” usually signals residual sugar and pale colour. Culinary use differs from dry Provence pinks because of that sweetness. In the kitchen, White Zinfandel suits fruit glazes, mild chilli-sweet sauces, and desserts more than classic savoury reductions; residual sugar can help caramelise but will cloy in garlic-herb pans. For savoury cookery prefer dry Zinfandel rosé labelled as such. When using White Zinfandel, balance with acid (citrus, vinegar) and heat so the sauce does not taste candy-like.
