Rioja rosé (rosado) is typically Tempranillo and/or Garnacha based, dry, with cherry and red-berry fruit, light body, and the clean acid of northern Spain’s flagship region. Styles run from pale modern pinks to traditional deeper rosados; quality estate bottles are serious food wines, not mere by-products. Oak is rare; freshness is the goal. Deglaze chicken, mushrooms, and mild lamb with Rioja rosado; cherry fruit pairs with Spanish paprika and garlic without red-wine tannin. Use in light bean and vegetable stews. Choose dry DOCa Rioja rosado for cooking so residual sugar does not skew savoury pans.
