Côtes de Provence Rosé
Côtes de Provence rosé is the high-volume face of pale, dry Provençal pink—salmon colour, citrus and red-berry aromatics, light body, and crisp finish from Grenache, Cinsault, Syrah, Mourvèdre, and related varieties. AOC rules and modern cellar practice fixed the global pale-rosé template. Quality ranges from simple chillable bottles to estate crus with real precision. Use Côtes de Provence rosé for seafood deglazes, chicken with herbs de Provence, and summer vegetable cooking; short reductions keep delicacy. It is the default dry pink cooking wine for light Mediterranean plates. Avoid treating sweet blush as a substitute—the AOC style is dry and food-led.
