Cabernet Sauvignon Rosé

Cabernet Sauvignon rosé shows blackcurrant, red berry, and sometimes herbaceous notes with slightly firmer structure than soft Merlot pinks, still far lighter than red Cabernet. Colour can be pale salmon or deeper pink depending on contact time; dry examples from Bordeaux, California, Chile, and South Africa work as serious table rosés. Saignée from red programmes is a common origin. Use Cabernet rosé for grilled meats, pepper sauces, and robust vegetable dishes that need more grip than Provence pale pinks. Short deglazes capture currant fruit; long reductions can emphasise green herb notes if the fruit was underripe—choose ripe, dry bottles. Chilled service keeps the wine bright in the pan and glass.
