Bandol Rosé
Bandol rosé is Provence’s most structured pink—Mourvèdre-led, dry, often deeper than pale Côte d’Azur fashion, with red fruit, garrigue, and a firm, age-worthy finish. AOC rules require significant Mourvèdre in the blend; the result is a gastronomic rosé for full meals rather than only aperitif sipping. Colour and grip distinguish it within Provence. In the kitchen, Bandol rosé handles bouillabaisse, grilled lamb, aioli platters, and robust vegetable stews; reduce for pan sauces that need more backbone than ultra-pale pinks. It is one of the best rosés for serious savoury cookery. Serve cool, not frozen, so savoury aromatics show in the sauce.
