Zinfandel
Zinfandel is California’s historic red of bramble fruit, spice, and often high alcohol—ranging from light, cool-climate styles to dense, late-harvest and old-vine bottlings—genetically matched to Italy’s Primitivo and Croatia’s Crljenak lineages. White Zinfandel is a separate blush product; classic Zinfandel here means the dry or off-dry red table wine. Use Zinfandel for barbecue glazes, chili, roasted pork, and tomato-based braises where jammy spice helps. Watch alcohol in reductions; it concentrates fast. A splash of vinegar or stock keeps sauces from tasting hot and sweet.
