St. Laurent
St. Laurent is a Central European red related to the Pinot family—darker and often more robust than Pinot Noir, with black cherry, smoke, and fine tannin when carefully grown. Austria, Czechia, and Germany produce both light and structured examples; the variety can be finicky in the vineyard but rewarding in the glass. It brings Pinot-like elegance with a slightly denser fruit profile. Cook with St. Laurent for duck, game birds, and mushroom sauces where you want Pinot sensitivity with a bit more colour and grip. Gentle reductions preserve cherry perfume; aggressive boiling flattens it. Excellent for deglazing pan juices from roast poultry and light game.
