Shiraz

Shiraz is the Australian name and style tradition for Syrah—often riper, fuller, and more boldly fruited than many northern Rhône bottles, with blackberry, pepper, chocolate, and sometimes eucalyptus or sweet oak. Barossa, McLaren Vale, and Hunter define contrasting weights from dense and jammy to medium and savoury. Use Shiraz for grilled meats, barbecue sauces, beef pies, and spicy stews where peppery fruit stands up to char and heat. Reduce with care so high alcohol does not concentrate harshly; a spoon of stock softens tannin if the pan sauce grips too hard.
